The production process involves soft pressing of the whole bunches, contact of the must with the grape skins for a few hours and alcoholic fermentation of the must in steel vats.
For sparkling wine we use the Charmat method, which takes place in an autoclave in order to enhance the characteristics of the vine and give the wine a fine and persistent perlage
