The wine is produced from a 10-year-old vineyard located on yellow sandstone soil, exposed to the south/east and at an altitude of 150 m above sea level. The harvest takes place in the third ten days of August and the bunches are delicately pressed.
The alcoholic fermentation of the must takes place in steel vats, the second fermentation at low temperature enhances the characteristics of the grape variety, giving the wine a fine and persistent perlage. The wine is made into sparkling wine in an autoclave, according to the Charmat/Martinotti method.
Its longevity is indefinite and goes very well with land and sea finger food
